Tres Leches Birthday Cake

For a fun, easy variation on a classic birthday cake, why not try taking a classic box birthday cake mix and turning it into a tres leched cake? This recipe takes the traditional Latin American dessert and incorporates the sweet, nostalgic taste of vanilla cake batter and rainbow sprinkles. The result is a deliciously milky cake that's bursting with all the fun and festivity of a classic birthday celebration. Whether you're celebrating a special occasion or just want to add a little sweetness to your day, this Tres Leches Birthday Cake is sure to be a crowd-pleaser.


INGREDIENTS

For the Cake

1 Box of Pillsbury Funfetti Cake Mix

1 cup (240g) Milk

1 Stick (115g) Unsalted butter, melted

3 Large Eggs

For the Milk Bath

1½ cup (360g) Whole milk

½ cup (120g) Heavy cream

½ can (200g) Sweetened condensed milk

2 tsp Vanilla extract

For the Whipped Cream

1 cup (240g) Heavy cream

5-6 tbsp Sweetened condensed milk

2 tsp Vanilla extract

 

INSTRUCTIONS

Bake the cake

Preheat the oven to 350°F(180°C)

In a large bowl combine the cake mix, milk, melted butter and eggs.

Mix until well combined (about 1 minute).

Transfer to a 13x9 inch pan, greased and floured and bake. Please note that you’re using a different size and shape pan that the instruction of the packaging expect. So your cook time might be pretty different to what’s written on the box. Mine only took 15 min to cook, even though the box said 35 minutes, So, please keep an eye on it - every oven is different.

Once out of the oven allow the cake to sit for 10-15 minutes.

Prepare the milk bath

In a large jug combine the milk, heavy cream and condesed milk and vanilla.

Pour the mixture over the warm cake (not hot, not cold). The cake must be warm as it will absorb the milk mixture more easily.

Cover and allow to sit to cool completely.

Make the whipped cream

Using electric beaters with the heavy cream, sweetened condensed milk and vanilla until fluffy. Cover the entire cake with the frosting.
