No Bake Truffles

No-Bake Chocolate Truffles Recipe

Just 3 Ingredients & No Oven

Everyone loves chocolate truffles for the holidays. I wanted to give you some easy options that are delicious but no-bake, and are easy enough for anyone of any age to make them. These truffles come together in minutes - each recipe has only three easy-to-find ingredients. First up, are my Chocolate Biscoff Truffles, with a delicious Biscoff cookie inside, and a coating of whatever your favorite chocolate is! Next up, are my White Chocolate Coconut Truffles. If you like coconut (and I know not everyone does), you really MUST try these - they’re amazing - they taste just like Ferrero Raffaello! I like to hide an almond inside, which makes them even more delicious!


INGREDIENTS

Chocolate Biscoff Truffles

10½ Biscoff Cookies (300g)

12½ ounces Biscoff Spread (350g)

7 ounces chocolate (200g)

White Chocolate Coconut Truffles

2 cups shredded coconut (170g)

3½ ounces white chocolate, cut into tiny pieces (100g)

½ cup condensed milk (160g)

Optional - almonds, toasted, to hide inside each truffle.

 

INSTRUCTIONS

Chocolate Biscoff Truffles

Add the cookies into your food processor and process until you get crumbs.

Transfer the shreddded cookies to a large bowl and add the cookie butter( I like to microwave it for 30 seconds, so it's a runnier consistency). Mix until well combined.

Depending what spread and cookies you use you may need a bit more spread. Adjust as you make this. We are looking for a dough that when squeezed in between your hands, holds it shape.

Roll into balls using wet hands or an ice cream scoop and place onto a tray lined with parchment paper.

Place the truffles into the freezer for 10 minutes..

Melt the chocolate in the microwave stirring every 30 seconds until fully melted.

Coat each truffle in the chocolate and set onto some parchment paper to harden. To speed things up you can pop these back into the freezer for a few minutes and they'll set up instantly.

Store in an airtight container for up to 1 week.

White Chocolate Coconut Truffles

In a small sauce pan bring the condensed milk to a simmer ( careful as this can burn easily). As soon as it comes to a simmer turn off the stove. Add the white chocolate cut into tiny pieces and mix until fully melted.

Alternatively you can also do this using a microwave, stirring every 20-30 seconds until the mixture is fully melted.

Pour this over the shredded coconut and mix until the mixture comes together( see video for visuals.)

Form the truffles using wet hands and optionally add a toasted almond in the center of the truffles.

Roll the truffles into the coconut flour.

Store in an airtight container for up to 1 week.
