Ingredients

For the mochi ice cream

90 g (½ cup) Glutinous rice flour

2 tbsp Sugar

150 g (⅔ cup) Water

Pinch of salt

Ice cream of your choice

Method

For the mochi ice cream

In a bowl, mix together the rice flour, sugar, water and salt.

Microwave the mixture for 2 - 3 minutes until a dough forms.

Dust your work surface with cornstarch, and roll out the dough. Sprinkle the top surface of the dough with cornstarch.

Refrigerate the dough for half an hour.

When cold, use a cookie cutter to cut out round shapes .

Place a spoon of ice cream in the center of each mochi, and wrap the dough around the ice cream to form a ball.

Wrap plastic wrap very tightly around each mochi ice cream ball, and freeze for one hour.
