Ingredients

12 g gelatin - 5 sheets or 1½ envelopes of unflavored gelatin powder

120 g (½ cup) Water (to add to the gelatin)

1 tsp Vanilla essence

60 g (2 oz) Corn syrup or lightly flavored honey

200 g (1 cup) sugar

2 - 3 tbsp Water (to add to the sugar and honey)

Pinch of salt

 

Method

Dust your work surface/parchment paper generously with cornstarch. If you’re using a baking dish, brush it with oil, line it with parchment paper and dust with cornstarch.

Soften the gelatin sheets in cold water in your mixing bowl or a heat proof safe bowl. If you’re using gelatin powder, sprinkle the gelatin over the water, mix and allow to stand.

In a tall saucepan over medium heat combine the sugar, honey (or corn syrup) and water. Stir the mixture and bring to a boil. Then cook, without stirring, until the mixture reaches 115 °C (240 °F).

Quickly but carefully pour your hot sugar mixture over your gelatin and whip on high for 5 minutes or until this mixture reaches medium/stiff peaks.

Beat in the vanilla essence and quickly transfer into your prepared dish or into a piping bag and pipe out the marshmallows.

If using the piping bag method, work fast as the mixture sets up quickly. Allow the marshmallows to sit for 5 minutes. Then dust the top and sides with cornstarch, roll them in the cornstarch and cut out the marshmallows.

If you’re using a baking dish allow the marshmallows to set for a minimum of 4 hours, and up to 12 hours or overnight.

Place marshmallows in a siv and shake off the access cornstarch.

Note: Freshly made marshmallows will have an amazing soft melt in your mouth texture. As they sit for a couple hours they’ll develop that iconic bouncy squishy texture.

Tips

Store marshmallows covered at room temp.

If you’re using the tray method, it can take up to 12 hours for the marshmallows to be ready because it takes longer for them to dry out and become bouncy. This is due to the much-reduced surface area compared to the piped versions. Don’t worry though - the tray versions will be just as good as the piped versions in the end!
