Ingredients

For the cookies

225 g (1½ cups) All purpose flour

20 g (3 tbsp) Cocoa powder

2 Egg yolks

100 g (¾ cup) Powdered sugar

150 g (1⅓ sticks) Cold butter

Zest of one orange

¼ tsp Salt

For the icing

400 - 500 g (3 - 4 cups) Powdered sugar

1 Egg white

Juice of half a lemon

Any flavour extract you prefer (e.g. vanilla, almond etc)

 

Method

For the cookies

In a food processor, add the flour, powdered sugar, salt, butter, cocoa powder and orange zest. Pulse until fine crumbs form.

Add the egg yolks, and pulse until the dough comes together.

Cover the dough, and refrigerate for at least 30 minutes.

Roll out the dough and cut out the cookie shapes.

Place the cookies onto a baking sheet lined with parchment paper, and bake in a preheated oven at 180 °C (350 °F) for around 20 - 22 minutes.

Allow to cool completely.

For the icing

Combine the egg white, powdered sugar, lemon juice and the flavored extract of your choice, to form the icing.

Place in a piping bag and ice the cooled cookies.

Tips

Store the cookies in an air-tight container.
