Ingredients

450 g (3½ cups) All purpose flour

2 tbsp Sugar

7 g (1 packet) Dried yeast

¾ tsp Salt

260 g (1 cup + 1 tbsp) Warm milk

50 g (½ stick) Unsalted butter, melted

Dry mozzarella cheese
(enough for stuffing to your liking)

Melted butter to brush on top

Method

In a large bowl, add the flour and sugar and salt. Mix briefly

In a jug, mix together warm milk, melted butter and yeast.

Combine the wet and dry ingredients and stir to form a rough dough. If you’re using a stand mixer, knead the dough on high for 3 minutes until the dough is smooth. If you’re kneading by hand, it will take you 10 to 15 minutes.

Transfer dough into a greased bowl, cover and allow the dough to rise for 2 hours or until it’s doubled in size.

Cut the dough into 10 or 12 pieces, to form the crescent buns (see the video for details of technique)

Stuff the dough with the mozzarella cheese (or any stuffing of your choice). If you prefer, you can omit the stuffing step.

Bake in a pre-heated over at 180°C (350°F) for around 18 - 20 minutes.

When they come out of the oven (while they’re still hot), brush with melted butter (do not skip this step).

Tips

Once cooled store the buns in a ziplock bag or in an air-tight container.
