Ingredients

For the cookies

150 g (1 cup + 1 tbsp) All purpose flour

110 g (1 stick) Semi-cold butter, cut into small pieces

60 g (2 oz) Sweetened condensed milk

1 tsp Vanilla extract (optional)

 

Method

For the cookies

In a large bowl, add the butter and the flour.

Use your fingers to rub the butter into the flour.

Add the condensed milk, and bring the dough together using your hands.

Roll out the dough, and cut out the cookies.

For half the cookies, make a hole in the center. These will form the top halves of the sandwich.

Place the cookies onto a baking sheet lined with parchment paper.

Bake in a preheated oven at 160 °C (360 °F) for 10 minutes.

Allow the cookies to cool before assembling into sandwiches, with a little condensed milk for the filling.

Tips

Take the butter out of the fridge 30 minutes before using.

Store the cookies in an air-tight container.
